OOOOH CHOCOLATE CHIP COOKIES!!!

Ever since I was a little kid, I lOOOVED chocolate. Loved it! I loved it so much that my aunt would say, "Oooooh...chocolate," as a way of greeting me because that was pretty much what I sounded like any time chocolate was around me. It became our little inside joke acknowledging my inner fat kid.
Do you know how hard it was to give up chocolate chip cookies when I found out they were unhealthy? So hard, that I didn't. Instead, I was determined to find a way to cheat the system. That's why these delicious, gluten-free, dairy-free and soy-free are a necessity in my life.

CHOCOLATE CHIP COOKIES
Ingredients:
1 cup almond flour
1 tbsp coconut flour
1 egg
4 tbsp coconut oil or ghee
3 tbsp raw honey or maple syrup
1 tsp organic vanilla extract
1 tsp cinnamon
1/4 tsp baking soda
dash of sea salt
1/4 cup chocolate chips (Food for Life if eating dairy free)
Directions:
1. Preheat oven to 350.
2. Combine almond flour, coconut flour, cinnamon, baking soda and salt in a big bowl.
3. In a separate bowl, mix oil, egg, honey and vanilla extract.
4. Pour wet mix into the dry mix bowl. Mix well. Add chocolate chips.
5. Place spoonfuls onto a baking pan and place in the oven.
